Luscious Lime Pie
- 1 Tbsp. gelatin
- 1/2 c. water, cold
- dash of salt
- 4 egg yolks, beaten
- 1 (6 oz.) can frozen limeade concentrate
- few drops green food coloring
- 4 egg whites
- 1/2 c. sugar
- 1/2 c. whipping cream
- 1 (9-inch) baked pie shell
- lime slices for garnish
- 1/4 c. whipping cream, whipped for garnish
- pomegranate seed for garnish (optional)
- In top of
- double
- boiler soften gelatin in cold water. Add dash
- of
- salt
- and egg yolks; cook and stir over hot (not boiling)
- water
- until mixture is slightly thick.
- Remove from heat
- and
- stir in concentrate.
- Chill, stirring occasionally, until
- mixture
- mounds slightly when spooned.
- Beat egg whites until
- soft peaks form.
- Gradually add sugar, beating to stiff peaks.
- Fold
- in gelatin mixture, then whipped cream.
- Add few drops
- green
- foodtoloring.
- Pile
- into cooled pastry shell. Chill until
- firm.top with whipped cream and lime slices and pomegranate seed (optional).
- Makes 1 pie.
