Glori-Fied Tuna
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 celery stalk with leaves, chopped
- 1 carrot, grated coarsely
- 2 Tbsp. corn oil (Mazola)
- 2 Tbsp. butter
- 1 c. broccoli flowerets (in separate stalks)
- 1/4 tsp. cayenne pepper
- 1/4 tsp. black pepper
- 1/4 tsp. paprika
- 1 can cream of mushroom soup (Campbell's)
- 1/2 soup can water
- 1 can tuna, drained
- 4 slices cheese (optional)
- Heat oven to
- 350u0b0.
- In
- largetrypan,
- heat oil.
- Add onion, green pepper,
- celery and carrot.
- Stir-fry over medium heat about 12tinutes
- or until tender.
- Add broccoli, butter and rest of ingredients,
- stirring gently until well blended. Pour into butter greased
- baking
- dish and, if desired, cover with the cheese
- or bread crumbs.
- Simmer in oven, uncovered, until
- cheese
- melts
- or crumbs
- lightly
- brown.
- Serve
- over toasted rolls or noodles.
