Spicy Italian Cabbage
- 1/8 c. olive oil
- 8 oz. onion, diced
- 4 oz. diced celery
- 1/4 tsp. hot pepper flakes
- 1/2 tsp. thyme leaf
- 3 Tbsp. chopped garlic
- 1/2 head new cabbage, diced
- 3 lb. (1 medium) head cabbage
- 1/2 c. Parmesan cheese
- 1/4 tsp. salt
- 1/8 tsp. pepper (black)
- 1 can (16 oz.) tomato sauce (Hunt's)
- 1 Tbsp. parsley flakes
- Heat olive oil, add onion and celery and "sweat" for 10 minutes over medium heat.
- Stir; add herbs, spices, garlic and cook 3 minutes.
- Add tomato sauce, parsley and stir in well.
- Add diced cabbage, cover lightly and cook for 20 minutes until cabbage is tender.
- Remove from heat, add salt and pepper, Parmesan cheese and mix well.
- Place in casserole and bake for 25 minutes.
- Serve hot with extra Parmesan cheese.
