Tutti-Frutti Lemon
- 1 (No. 2) can pineapple chunks
- 1 (11 oz.) can mandarin orange sections
- 1 (17 oz.) can fruit cocktail
- 1/2 c. flaked coconut
- 2 Tbsp. lemon juice
- 2 (1 3/4 oz.) pkg. instant lemon pudding
- 2 bananas
- 1/4 to 1/2 c. nuts (optional)
- whipped topping (optional)
- In large bowl, combine undrained pineapple, undrained orange sections and undrained fruit cocktail with flaked coconut and lemon juice.
- Sprinkle dry lemon pudding mix over fruits and toss lightly to combine.
- Chill.
- Just before serving, peel bananas and slice to make 1 1/2 cups of bananas.
- Fold bananas into lemon-fruit mixture; add nuts.
- Serve in dessert dishes or sherbet glasses.
- Top with whipped topping.
- Makes 10 servings.
