Chocolate Mint Layer Squares
- 2 (1 oz.) unsweetened chocolate
- 1/2 c. butter or margarine
- 2 eggs
- 1 c. sugar
- 1/2 c. all-purpose flour
- 1/2 c. chopped walnuts and pecans
- 1 1/2 c. sifted powdered sugar
- 3 Tbsp. whipping cream
- 3/4 tsp. peppermint extract
- 2 Tbsp. butter or margarine
- 1 tsp. vanilla extract
- 2 drops green food coloring
- 2 (1 oz.) sq. sweet baking chocolate
- Melt unsweetened chocolate and 1/2 cup butter in top of a double boiler over simmering water. Cool.
- Combine eggs and 1 cup sugar, beating until light and fluffy.
- Stir in flour, walnuts and cooled chocolate. Spread into a 9-inch square baking pan. Bake at 350u0b0 for 25 minutes. Cool in pan on wire rack.
