Corned Beef Cheese Ball
- 1 can corned beef
- 1 (8 oz.) container small curd cottage cheese
- 1/4 c. sliced scallions
- 1/4 c. minced green pepper
- 2 tsp. minced parsley
- 1 tsp. prepared horseradish
- 1/4 tsp. salt
- 1/8 tsp. Tabasco
- 1/8 tsp. garlic powder
- 1 (8 oz.) pkg. cream cheese, softened
- assorted crackers
- thick cucumber slices
- Crumble corned beef into a medium bowl. Add cottage cheese, scallions, green pepper, parsley and seasonings. Mix thoroughly. Chill several hours to blend flavors and to firm mixture. Remove mixture from bowl and shape into a ball. Spread cream cheese evenly over ball. Sprinkle paprika and parsley in a sizable sheet of plastic wrap (optional). Wrap ball in this plastic and refrigerate. Serve on a cheese board or tray with assorted crackers and thick cucumber slices for spreading. Garnish with sprigs of parsley, if desired.
