Maple Bacon Cheddar Cake(Servings: 8 To 12)
- 1 1/2 c. Bisquick baking mix
- 1 Tbsp. sugar
- 2 eggs
- 3/4 c. milk (2%)
- 1/4 c. maple syrup
- dash of nutmeg
- 2 c. Cheddar cheese, grated
- 18 slices bacon, cooked and drained
- Cut bacon strips crosswise in 1/2-inch pieces, then fry until golden; drain and keep warm.
- Combine remaining ingredients except for cheese.
- Mix until smooth, then stir in 1 cup of cheese.
- Set aside the other cup of cheese.
- Pour mixture into a greased 9 x 13-inch pan.
- Bake in a preheated oven at 425u0b0 for 12 to 15 minutes until very lightly brown and springs back when lightly touched.
- After removing from oven, brush the top with melted butter, then sprinkle reserved cheese and bacon pieces on top. Serve with additional maple syrup and fresh fruit garnish.
- Serves 8 to 12 portions.
