Fruit-Turkey Salad
- 1 head iceberg lettuce
- 1/4 c. salad oil
- 2 tsp. vinegar
- 2 tsp. salt
- 1/2 tsp. sweet basil
- 1/4 tsp. garlic powder
- 2 c. cubed, cooked turkey or chicken
- 1/2 onion, thinly sliced into rings
- 1 tomato, cubed
- 1/2 avocado, peeled and sliced
- 1 tangerine or orange, peeled and sectioned
- Core, rinse and drain lettuce.
- Chill in plastic bag.
- Reserve 4 whole leaves for lettuce cups; shred enough lettuce to make 4 cups.
- Set aside.
- Blend oil, vinegar, salt, basil, garlic powder and pepper.
- Combine with turkey or chicken, onion and tomato; toss gently to mix.
- Arrange lettuce cups on 4 salad plates.
- Add shredded lettuce, then top with turkey mixture.
- Garnish with avocado slices and tangerines or orange sections.
- Serve at once. Yield: 4 servings.
