Fruit-Turkey Salad

  1. Core, rinse and drain lettuce.
  2. Chill in plastic bag.
  3. Reserve 4 whole leaves for lettuce cups; shred enough lettuce to make 4 cups.
  4. Set aside.
  5. Blend oil, vinegar, salt, basil, garlic powder and pepper.
  6. Combine with turkey or chicken, onion and tomato; toss gently to mix.
  7. Arrange lettuce cups on 4 salad plates.
  8. Add shredded lettuce, then top with turkey mixture.
  9. Garnish with avocado slices and tangerines or orange sections.
  10. Serve at once. Yield: 4 servings.
