Red Hot Pickle Rings
- 2 gal. cucumbers (yellow), cut into rings after peeling and seeding
- 2 c. lime
- 8 qt. water
- 1 c. vinegar
- 1 small bottle red food color
- 1 Tbsp. alum and water to cover
- 2 c. vinegar
- 2 c. water
- 10 c. sugar
- 6 to 8 sticks cinnamon
- 1 pkg. red hots (9 to 10 oz.)
- Cover
- rings
- with
- lime
- and
- water
- mixture.toak 24 hours. Drain
- and
- wash
- in
- cold water.toak 3 hours in ice water. Drain.
- Mix
- 1
- cup vinegar, food color and alum; pour over
- rings with
- water
- to
- cover.
- Heat and simmer 2 hours; drain.
- Bring 2
- cups
- vinegar,
- 2
- cupstater, sugar, stick cinnamon and red hots to boil and pour over rings.
- Weigh down to
- keep all covered with mixture.
- Let stand overnight.
- Heat 3 mornings; the 3rd morning heat to boiling and pack into jars and seal.
