Mint Chocolate Cream Puffs
- nonstick cooking spray
- 1/2 c. water
- 2 Tbsp. margarine
- 1/2 c. all-purpose flour
- 2 eggs
- 1 (4 serving size) pkg. reduced calorie regular vanilla pudding mix (not instant)
- 2 Tbsp. unsweetened cocoa powder
- 1/8 tsp. peppermint extract
- 1/2 c. frozen whipped nondairy dessert topping (light)
- ground nutmeg
- Spray a baking sheet with nonstick cooking spray.
- Set aside. In a small saucepan, combine water and margarine.
- Bring to boiling.
- Add flour all at once, stirring vigorously.
- Cook and stir until mixture forms a ball that doesn't separate.
- Remove from heat.
- Cool for 5 minutes.
- Add eggs one at a time, beating after each addition with a wooden spoon until mixture is shiny and smooth.
- Drop mixture into 8 mounds 3 inches apart on the baking sheet.
