Family-Style Salmon Croquettes
- 1 (1 lb.) can salmon
- 1/4 c. butter or margarine
- 1 medium onion, finely chopped
- 1 medium green pepper, finely chopped
- 1/4 c. flour
- 1 c. mashed potatoes
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. Worcestershire sauce
- 1 egg
- 2 Tbsp. milk
- 3/4 c. corn flake crumbs
- Drain salmon and reserve liquid.
- Flake the salmon and set aside.
- Melt butter in saucepan, then add onion and green pepper and saute for 10 minutes.
- Stir in flour.
- Remove from heat and stir in the reserved salmon liquid.
- Cook over low heat until mixture leaves sides of pan, stirring constantly.
- Beat in the potatoes, salt, pepper and Worcestershire sauce, then stir in the salmon.
- Cool, then chill thoroughly.
- Shape into croquettes. Beat the egg with the milk, then dip the croquettes in the egg mixture and coat thoroughly with the crumbs.
- Fry in deep fat at 365u0b0 for about 5 minutes or until golden brown.
- Drain on absorbent paper.
