Family-Style Salmon Croquettes

  1. Drain salmon and reserve liquid.
  2. Flake the salmon and set aside.
  3. Melt butter in saucepan, then add onion and green pepper and saute for 10 minutes.
  4. Stir in flour.
  5. Remove from heat and stir in the reserved salmon liquid.
  6. Cook over low heat until mixture leaves sides of pan, stirring constantly.
  7. Beat in the potatoes, salt, pepper and Worcestershire sauce, then stir in the salmon.
  8. Cool, then chill thoroughly.
  9. Shape into croquettes. Beat the egg with the milk, then dip the croquettes in the egg mixture and coat thoroughly with the crumbs.
  10. Fry in deep fat at 365u0b0 for about 5 minutes or until golden brown.
  11. Drain on absorbent paper.
