Sicilian Meat Loaf
- 2 beaten eggs
- 3/4 c. hard crumbs
- 1/2 c. tomato juice
- 2 Tbsp. parsley
- 1/2 tsp. oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 small clove garlic, minced
- 2 lb. lean ground meat
- 8 thin slices boiled ham
- 6 oz. shredded Mozzarella cheese
- 3 slices Mozzarella cheese
- Mix all except ham and shredded and sliced cheese with the ground meat.
- On foil or wax paper, put meat mixture into a 12 x 10-inch rectangle.
- Add ham slices on top of meat, leaving a small margin around edges.
- Sprinkle shredded cheese over ham.
- Starting at short end, carefully roll up meat, using foil or wax paper to lift.
- Seal all edges.
- Place roll, seam down, in 13 x 9 x 2-inch pan.
- Bake in 350u0b0 oven for 1 hour and 15 minutes.
- Place cheese slices over top of roll; return to oven for 5 minutes or until cheese melts.
