Fresh Tomato Soup

  1. In a large saucepan, cook onion in butter until tender.
  2. Stir in flour to form a smooth paste.
  3. Gradually add water, stirring constantly, until thickened.
  4. Add the tomatoes, parsley, salt, sugar, thyme, bay leaf and pepper; bring to a boil.
  5. Reduce heat, cover and simmer for 20 to 30 minutes or until tomatoes are tender.
  6. Remove bay leaf.
  7. Garnish with lemon, if desired.
  8. Yields 4 servings (5 cups).
