Winter Vegetable Parmesan(Meatless Main Dish; 285 Calories Per Serving)

  1. In a 5-quart Dutch oven over medium-high heat in 2 tablespoons hot salad oil, cook zucchini, onions, garlic and 1/4 teaspoon salt until tender-crisp.
  2. Discard garlic; remove mixture to bowl.
  3. In 2 more tablespoons hot salad oil, stir broccoli and cauliflower; add water and 1/4 teaspoon salt.
  4. Cover; cook until tender-crisp, stirring occasionally.
  5. Return zucchini mixture to Dutch oven; add remaining ingredients.
  6. Cover; cook 5 minutes or until hot. Makes 6 main dish servings.
