Cranberry Chicken
- 1/4 c. oleo
- 4 whole chicken breasts, halved
- 1/2 chopped onion
- 2 c. apple cider
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. lemon peel
- 1 Tbsp. cornstarch
- 1/3 c. sugar
- 2 c. fresh cranberries
- 4 bananas, sliced
- Melt oleo in a large skillet.
- Add the chicken and brown on all sides over medium heat.
- Add the chopped onion to the skillet and cook until tender, about 5 minutes.
- Add 1 1/2 cups cider, salt, pepper and lemon peel.
- Cover the skillet and let ingredients simmer 30 minutes.
- Remove the chicken
- and keep warm. Combine cornstarch with the remaining 1/2 cup cider and add to the skillet with the sugar and cranberries.
- Cook 10 minutes, stirring occasionally.
- Return chicken to the skillet along with the sliced bananas.
- Heat all ingredients to serving temperature.
