Hearty Beef Goulash Soup
- 6 small unpeeled red potatoes
- 1 medium onion
- 2 Tbsp. oil
- 2 garlic cloves
- 1/2 lb. ground round
- 3 c. tomato juice
- 1 3/4 c. beef broth
- 2 tsp. paprika
- 1/2 tsp. black pepper
- 1 small green bell pepper
- 1 small red bell pepper
- Cut the potatoes into 1/4 inch dices.
- Coarsely chop the onion. In a large saucepan, warm the oil over medium-high heat until hot, not smoking.
- Add onion and garlic and saute until onion is just translucent, 1 to 2 minutes.
- Crumble ground beef into pan and cook, breaking meat up with a spoon, until meat just begins to brown, 5 to 10 minutes.
- Add tomato juice, beef broth, paprika, black pepper and potatoes.
- Bring mixture to a boil, reduce heat to medium-low.
- Cover and simmer, stirring often, for 10 minutes.
- Cut bell peppers in 1/4 inch dices.
- Stir in peppers and cook until potatoes are tender, about 10 minutes.
