Granny'S Bean Goulash
- 1 lb. dried pinto beans
- 2 small slices salt pork
- 2 Tbsp. bacon drippings
- 1 clove garlic
- salt and pepper
- 1 lb. hamburger
- 1 large onion, chopped
- 1 large green pepper, chopped
- 4 stalks celery, chopped
- 1 Tbsp. garlic powder
- 1 tsp. chili powder
- 1 (20 oz.) can tomatoes, chopped
- After soaking beans overnight, boil with pork, bacon drippings, garlic, salt and pepper.
- Cook until beans are barely tender, about 1 1/2 hours.
- In a large skillet, brown hamburger, onion, pepper and celery.
- Brown until onions begin to turn transparent.
- Add garlic powder, chili powder, tomatoes, salt and pepper.
- Simmer about 10 minutes and add to beans.
- Cool, ladle into 1 quart freezer containers.
- Label, freeze.
- To serve:
- Thaw and place in a Dutch oven.
- Simmer until juice is thick.
- Serve with cabbage slaw and cornbread.
