Texas Sweet Potato Pie
- 1 (17 oz.) can sweet potatoes, drained and mashed
- 1 c. firmly packed brown sugar
- 2/3 c. milk
- 2/3 c. whipping cream
- 3 eggs
- 3 Tbsp. bourbon
- 1 Tbsp. butter, melted
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground ginger
- 1/4 tsp. salt
- 1 unbaked 9-inch pastry shell
- whipped cream (optional)
- Combine first 4 ingredients in a large bowl; beat at low speed of an electric mixer until smooth.
- Add eggs, one at a time, beating well after each addition.
- Add bourbon and next 5 ingredients; beat just until blended.
- Pour mixture into pastry shell.
- Bake at 375u0b0 for 50 to 55 minutes or until set.
- Cool. Garnish with whipped cream, if desired.
