Chocolate Cheesecake
- 6 finely crushed chocolate wafers
- 1 c. light cream cheese
- 1 c. sugar
- 1 c. low-fat cottage cheese
- 1/4 c. plus 2 Tbsp. unsweetened cocoa
- 1/4 c. flour
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1 egg
- 2 Tbsp. mini chocolate chips
- Sprinkle chocolate wafer crumbs in bottom of a 7-inch spring-form pan.
- Set aside.
- Position knife blade in food processor.
- Add cream cheese and next 7 ingredients, mixing until smooth.
- Add egg and mix until blended.
- Fold in chocolate chips. Pour mixture over crumbs in pan.
- Bake at 300u0b0 for 65 to 70 minutes or until set.
- Let cool in pan.
- Cover and chill at least 8 hours. Remove sides of pan and serve.
- Makes 12 servings.
