Old Fashioned Slaw
- 1 medium head cabbage, shredded
- 1/2 c. chopped celery
- 1/2 c. chopped sweet pickle
- 1/4 c. mayonnaise
- 3 medium carrots, shredded
- 2 green onions, chopped
- 1 tsp. celery seed
- 1/4 c. butter or margarine
- 1/2 c. sweet pickle juice
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 egg, beaten
- Combine cabbage, celery, sweet pickle, mayonnaise, carrots, green onions and celery seed in a large bowl.
- Set aside.
- Melt butter in a heavy saucepan.
- Add pickle juice, salt and pepper; stir well.
- Gradually stir about 1/4 of hot mixture into egg; add to remaining hot mixture, stirring constantly with a wire whisk. Cook over low heat, stirring constantly, until thickened.
- Add dressing to cabbage mixture; mix well.
- Chill 1 to 2 hours before serving.
