Frozen Fruit Salad(Alaska)
- 2 cans fruit cocktail (29 oz. size)
- 1 can crushed pineapple (20 oz. size)
- small jar maraschino cherries, sliced
- 1 c. chopped nuts
- 1 (8 oz.) pkg. cream cheese
- 1/2 c. mayonnaise
- 1 pkg. mini marshmallows
- 1/2 pt. whipping cream, whipped
- 2 envelopes Knox gelatine
- Drain fruit cocktail and pineapple (save juices).
- Soften gelatine in juices; heat to dissolve.
- Cool; set aside.
- Add fruit to gelatine mixture.
- Let set until soft set; add nuts and mini marshmallows.
- Fold in 1/2 pint whipping cream (whipped).
- Pour into mold.
- A large tube pan works well.
- Freeze overnight.
- Will keep frozen for quite some time; to loosen from mold, set in warm water.
- Turn onto plate and slice.
