Burrito Casserole
- 1 lb. ground beef, fried
- 1 (16 oz.) can refried beans
- 1 pkg. dry taco seasoning
- 1 can mushroom soup
- 1 (16 oz.) sour cream
- lettuce
- tomatoes
- cheese
- black olives
- onions
- salsa
- soft burrito shells
- taco sauce (optional)
- Fry meat; add taco seasoning and refried beans.
- Mix well. Spoon this filling into shells and roll up.
- Mix mushroom soup and sour cream together.
- Spoon small amount of this mixture in/on bottom of 13 x 9-inch pan.
- Lay filled shells, seam side down, in pan.
- Spoon and spread remaining soup/sour cream mixture over filled shells.
- Sprinkle with grated cheese.
- Bake at 350u0b0 for 1/2 hour or until cheese is melted and mixture is bubbly.
- May drizzle taco sauce over top, if desired.
- Serve with chopped vegetables listed above and with salsa.
- One package of 10 burrito shells makes two 13 x 9-inch pans full.
