Au Gratin Potatoes

  1. Place potatoes in a 3-quart saucepan; cover with water. Bring to a boil
  2. and
  3. cook
  4. 20
  5. minutes.
  6. Drain
  7. well.
  8. While potatoes are draining,
  9. make cheese sauce.
  10. In a medium saucepan, melt margarine;
  11. slowly
  12. stir
  13. in
  14. flour.
  15. Gradually
  16. add milk, stirring constantly.
  17. Drop
  18. cheese cubes in and continue to cook and
  19. stir
  20. until
  21. cheese is completely melted.
  22. Remove from heat and add
  23. pimento
  24. and
  25. green onion tops.
  26. In a large casserole, add potatoes.
  27. Stir in cheese sauce and serve while hot.
  28. Adjust milk for a thicker or thinner sauce.
