Au Gratin Potatoes
- 3 lb. potatoes, peeled and cut up
- 2 Tbsp. margarine
- 2 Tbsp. flour
- 2 1/2 c. milk
- 1 (8 oz.) box Velveeta cheese, cubed
- 1 (2 oz.) jar diced pimento
- 4 Tbsp. chopped green onion tops
- Place potatoes in a 3-quart saucepan; cover with water. Bring to a boil
- and
- cook
- 20
- minutes.
- Drain
- well.
- While potatoes are draining,
- make cheese sauce.
- In a medium saucepan, melt margarine;
- slowly
- stir
- in
- flour.
- Gradually
- add milk, stirring constantly.
- Drop
- cheese cubes in and continue to cook and
- stir
- until
- cheese is completely melted.
- Remove from heat and add
- pimento
- and
- green onion tops.
- In a large casserole, add potatoes.
- Stir in cheese sauce and serve while hot.
- Adjust milk for a thicker or thinner sauce.
