Cajun Pasta Salad
- 1 lb elbow macaroni
- 1 lb smoked sausage, sliced and sauteed
- 1/2 cup red pepper
- 2 bell peppers, diced
- 1 tablespoon garlic, pureed
- 2 stalks celery, diced
- 1/2 white onion, diced
- 2 bay leaves
- 1 tablespoon creole mustard
- 1/4 cup white vinegar
- 3/4 cup salad oil
- 1/4 cup parsley
- Toulouse Seasoning
- 1 tablespoon salt
- 1 tablespoon white pepper
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon paprika
- 1 tablespoon thyme
- Cook the pasta in gently boiling water until al dente.
- Remove from heat, drain, rinse and cool.
- Combine all ingredients in a large bowl, using only 2 TBS of Toulous Seasoning.
- The dish is best served at room temperature; however, chill thoroughly if preparing ahead of time and allow to stand one hour before serving.
