Economy Cake
- 1 c. dark brown sugar
- 1 c. water
- 1 1/2 c. raisins
- 1/3 c. Crisco
- 1 tsp. cinnamon
- 1/3 tsp. cloves
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 1 tsp. soda, dissolved in hot water
- 2 c. flour
- 1/2 tsp. baking powder
- 2 c. chopped English walnuts
- Boil the brown sugar, water, raisins, Crisco, cinnamon, cloves, nutmeg and salt together for 3 minutes.
- In a separate cup, mix soda, dissolved in hot water.
- When the ingredients are cool, mix together and add flour, baking powder and English walnuts.
- Pour into 2 round 9-inch cake pans and bake in a conventional oven at 350u0b0 for 50 to 55 minutes.
- If you also want to use candied fruits, bake for another 20 minutes.
- If you double the recipe, bake it in 1 (9 x 12-inch) oblong pan.
