Grits Casserole
- 4 c. water
- 1 tsp. garlic powder
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. quick cooking grits
- 2 Tbsp. butter
- 1 1/2 c. grated processed cheese, divided
- 2 eggs, beaten
- 1/2 c. milk
- 1 small can green chilies
- Preheat oven to 350u0b0.
- In a large saucepan, bring the water to a boil.
- Add garlic powder, salt and pepper.
- Bring mixture to a boil.
- Gradually stir in grits.
- Lower heat and simmer, stirring occasionally, for 5 minutes.
- Remove pan from heat; stir in butter and chilies.
- Add 1 cup of cheese until melted.
- Mix eggs with milk.
- Stir into grits.
- Pour grits into a greased 2-quart casserole.
- Sprinkle with remaining cheese.
- Bake for 1 hour. Makes 4 to 6 servings.
