Mexican Fiesta Dip
- 1 large container sour cream
- 1 pkg. taco seasoning
- 2 tsp. lemon juice
- 3 avocados
- 1 medium to large can refried beans
- salt and pepper to taste
- 1 bunch green onions
- 2 large tomatoes
- 1 to 2 cans sliced black olives
- 6 oz. Cheddar cheese, grated
- 1 pkg. tortilla chips
- On large oblong or round platter, spread a layer of refried beans.
- Combine avocados, lemon juice, salt and pepper.
- Spread that mixture on top of beans.
- Combine sour cream and taco seasoning.
- Spread on top of avocado mixture.
- Chop and combine green onions, tomatoes and olives.
- Spread in a ring around outside of platter.
- Garnish with Cheddar cheese and serve with tortilla chips.
