Seafood Casserole
- 1/2 Tbsp. margarine
- 1/2 lb. shrimp, peeled and deveined
- 1/2 lb. lobster meat or scallops
- 1 clove garlic, minced
- 1/4 c. green pepper, diced
- 1/4 c. white wine
- 1 tsp. lemon juice
- 1 egg, beaten
- 1/4 c. low calorie mayonnaise
- 1 tsp. dry mustard
- 1/2 tsp. salt
- 1/4 tsp. seafood seasoning
- 1/8 tsp. pepper
- 1 lb. Maryland backfin crabmeat, cartilage removed
- 1/4 c. seasoned bread crumbs
- 1/4 c. Cheddar cheese, grated
- paprika (for sprinkling)
- Preheat oven to 400u0b0.
- Melt margarine in a skillet and add shrimp, lobster, garlic and green pepper.
- Saute for 5 minutes. Transfer contents of skillet to a casserole dish.
- In a small bowl mix together wine, lemon juice, egg, mayonnaise, mustard and seasonings.
- Beat until well blended.
- Gently fold crabmeat and bread crumbs into liquid.
- Pour mixture over seafood in casserole and sprinkle with cheese and paprika.
- Bake for 10 to 12 minutes.
