Zucchini Raisin Cookies

  1. In mixing bowl, cream shortening and sugar.
  2. Add egg and beat well.
  3. Stir in zucchini; set aside.
  4. Combine flour, baking soda, spices, baking powder and salt.
  5. Add to zucchini mixture and stir until thoroughly combined.
  6. Stir in raisins.
  7. Drop by rounded teaspoonfuls 2-inches apart on greased cookie sheets.
  8. Bake at 375u0b0 until golden brown for 12 to 15 minutes.
  9. Cool in pans for 2 minutes before removing to wire rack.
  10. Cookies are cake like. Makes 3 dozen.
