Zucchini Raisin Cookies
- 1/2 c. shortening
- 1 c. sugar
- 1 egg
- 1 c. zucchini, peeled and shredded
- 2 c. flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/4 tsp. cloves
- 1 c. raisins
- In mixing bowl, cream shortening and sugar.
- Add egg and beat well.
- Stir in zucchini; set aside.
- Combine flour, baking soda, spices, baking powder and salt.
- Add to zucchini mixture and stir until thoroughly combined.
- Stir in raisins.
- Drop by rounded teaspoonfuls 2-inches apart on greased cookie sheets.
- Bake at 375u0b0 until golden brown for 12 to 15 minutes.
- Cool in pans for 2 minutes before removing to wire rack.
- Cookies are cake like. Makes 3 dozen.
