Fast Fixin' Fruit 'N' Cake
- 1 pkg. Duncan Hines Deluxe II white cake mix
- 1/4 c. oil
- 2 eggs
- 1/2 c. water
- 1 (20 to 23 oz.) can your favorite pie filling (suggestions: cherry, apple, blueberry, peach, strawberry, lemon, pineapple, pumpkin and blackberry)
- 1 c. butter
- 2 c. sugar
- 4 egg yolks and 2 whites, beaten well
- 2 1/2 c. flour
- milk from fresh coconut plus enough buttermilk to make 1 c. liquid
- 1 tsp. soda
- 1 tsp. vanilla
- 4 egg whites, stiffly beaten
- Cream butter and sugar. Add the 4 egg yolks and 2 whites, beaten together.
- Beat for 2 minutes at medium speed on mixer. Sift flour with soda added.
- Add flour mixture to first mixture, alternating with the buttermilk.
- Add vanilla.
- Fold in 4 stiffly beaten egg whites.
- Bake in three 9-inch layer pans that have been greased and floured.
- (I use four 8-inch pans.)
- Bake in 350u0b0 oven for 25 to 30 minutes.
- Makes 3 large layers or 4 smaller layers.
