Italian Soup Stew
- 1 (28 ounce) can whole tomatoes
- 1 lb Italian sausage, cut into bite sized pieces
- 1 (15 ounce) can tomato sauce, Italian flavor
- 7 cups beef stock
- 1 cup onion, chopped
- 1 garlic clove, minced
- 1 cup carrot, sliced
- 1 -2 tablespoon fresh basil, chopped (or 1 tsp dried)
- 1 teaspoon oregano
- 2 cups zucchini, sliced
- 1 cup mushroom, sliced
- 1 medium green pepper, seeded and sliced
- 1/4 cup fresh parsley, chopped
- 1 1/2 cups dill pickles, sliced
- 2 cups tortellini (frozen)
- Combine tomato, sausages, tomato sauce, stock, onion, garlic, carrots, basil and oregano in a large pot and simmer (DO NOT BOIL) 30 minutes.
- Add remaining ingredients and simmer slowly for another hour, adding more water as needed to cook tortellini.
