Blueberry Banana Bread
- 1 1/4 cups sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 1/2 cups very ripe bananas, mashed (about 3)
- 1/2 cup buttermilk or 1/2 cup plain yogurt
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup frozen blueberries (no need to thaw)
- Put oven rack on lowest position.
- Preheat oven to 350 degrees.
- Grease bottom only of two loaf pans.
- Cream butter and sugar till fluffy.
- Stir in eggs until well blended.
- Stir in bananas, buttermilk OR yogurt and vanilla.
- Beat until smooth.
- Stir in flour, baking soda, and salt until just moistened.
- Stir in blueberries.
- Divide batter evenly between the two loaf pans.
- Bake 60-70 minutes or until toothpick inserted in the middle comes out clean.
- Cool 10 minutes in pan.
- Loosen sides and remove bread from pans.
- Cool completely before slicing, about 2 hours.
