Lasagna (Delicious!)

  1. Brown meat slowly; spoon off excess fat. Add the next 8 ingredients. Simmer at least 30 minutes, stirring occasionally. Cook noodles in boiling, salted water about 15 minutes. Drain; rinse in cold water. Combine cottage cheese, eggs, 1 tsp. salt, pepper, parsley flakes, and Parmesan cheese (separately from meat). Using 13x9x2 pan, place small amount of meat mixture in bottom of pan; then 4 noodles; then spread half of cottage cheese mixture; then half of Mozzarella cheese; then half of meat sauce. Repeat the layers. Bake in moderate oven (350u0b0-375u0b0) about 45-50 minutes. Let stand about 15 minutes before cutting into serving pieces. This may be divided in two pans for smaller meals. Freezes well.
