Cornish Hens & Rice Pilaf
- 1 Cornish Hen halved or 1 whole Hen per person
- 1/2 c. Margarine
- 1 large Onion, finely chopped
- 1 tsp. dried Thyme
- 1-1/2 c. raw Regular White Rice
- 3 tsp. instant Chicken Bouillon
- 3 c. Hot Water
- Clean and prepare the quantity of Cornish Hens that are appropriate for the people being served.
- Place in a 350 - 375 oven for 1 hour.
- I put a bit of margarine on the outside of the hen and sometimes sprinkle it with Garlic Salt.
- In a skillet, place 1/4 c. of Margarine, cook Onion until golden.
- Put into a 2 quart casserole dish with a cover and set aside.
- In same skillet, heat remaining margarine, brown the Rice so that it is fluffy and golden brown.
- Add to the casserole dish.
- Add remaining ingredients. Bake for 350 - 375 for 30 - 40 minutes.
