Vidalia Onion-Cranberry Relish
- 1 large Vidalia or other mild sweet onion, cut into thin wedges
- 1 Tbsp. butter
- 1/4 c. dry red wine
- dash salt
- 3/4 c. packed brown sugar
- 4 inches stick cinnamon
- 1 12-oz. pkg. fresh cranberries (3 c.)
- Cook onion in butter in a medium skillet for 10 minutes or till tender, stirring frequently.
- Add wine and salt.
- Cook and stir 1 minute more.
- Remove from heat and set aside.
- Combine brown sugar, cinnamon, and 1 cup water in a medium saucepan; simmer, uncovered, for 15 minutes.
- Add 2 cups cranberries and cook, uncovered, for 10 minutes, stirring occasionally.
- Add remaining cranberries; cook 10 minutes more or till berries pop, stirring frequently.
- Remove cinnamon sticks.
- Stir in onion mixture. Transfer to a medium bowl.
- Cover and chill until serving time or up to 3 days.
- Makes about 3 cups.
