Vidalia Onion-Cranberry Relish

  1. Cook onion in butter in a medium skillet for 10 minutes or till tender, stirring frequently.
  2. Add wine and salt.
  3. Cook and stir 1 minute more.
  4. Remove from heat and set aside.
  5. Combine brown sugar, cinnamon, and 1 cup water in a medium saucepan; simmer, uncovered, for 15 minutes.
  6. Add 2 cups cranberries and cook, uncovered, for 10 minutes, stirring occasionally.
  7. Add remaining cranberries; cook 10 minutes more or till berries pop, stirring frequently.
  8. Remove cinnamon sticks.
  9. Stir in onion mixture. Transfer to a medium bowl.
  10. Cover and chill until serving time or up to 3 days.
  11. Makes about 3 cups.
