Primavara Contadina

  1. In medium skillet heat oil.
  2. Saute onion and garlic for one minute.
  3. Add zucchini, yellow squash and bell pepper.
  4. Saute 3 to 4 minutes.
  5. Stir in reserved tomato juice, Italian
  6. paste, water, salt and pepper.
  7. Simmer for 5 to 8 minutes or until vegetables are tender.
  8. Stir in tomatoes and basil.
  9. Simmer for 1 minute. Prepare pasta according to package directions.
  10. Serve sauce over pasta.
  11. Garnish with olives and basil.
  12. Makes 6 servings.
