Squash Casserole
- 2 c. cooked yellow squash
- 1 c. crushed cracker crumbs
- 1/2 c. finely chopped bell pepper
- 1 Tbsp. chopped parsley flakes
- 1 tsp. salt
- 1 tsp. sugar
- 1/2 tsp. black pepper
- 1/4 tsp. garlic salt
- 1 egg, beaten
- 1 c. sweet milk
- 1/2 c. melted oleo
- 1/2 c. grated American cheese
- 1/4 tsp. paprika
- 1 Tbsp. finely chopped fresh parsley
- Mix ingredients except cheese, paprika and parsley.
- Toss gently until well mixed.
- Place in greased 1 1/2-quart casserole. Bake in a 350u0b0 oven for 30 minutes.
- Remove from oven; sprinkle grated cheese on top.
- Sprinkle paprika on top of cheese.
- Return to oven and bake another 10 minutes or until cheese is melted and bubbly.
- Remove and sprinkle with chopped parsley before serving.
