Apple Streusel Slice

- 180 g butter, softened
- 3/4 cup caster sugar
- 2 eggs, lightly beaten
- 1 1/2 cups plain flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 large granny smith apple, peeled and cored
- for the streusel topping
- 1/4 cup brown sugar
- 1/4 cup plain flour
- 1 teaspoon ground cinnamon
- 30 g butter, softened
- Preheat oven to 180 degrees celcius.
- Grease and line a 3x18x28cm slab pan with baking paper.
- Using an electric mixer, cream butter and caster sugar until pale and creamy.
- Mix in the egg in two batches.
- Sift flour, baking powder, and cinnamon over the butter mixture. Fold through with a large metal spoon.
- Spread the mixture evenly in the pan. Top with diced apple.
- Make the streusel topping: Combine brown sugar, flour and cinnamon in a bowl. Rub in the butter using your fingers until clumps form. Crumble the topping over the slice.
- Bake for 45-50 minutes until golden and an inserted skewer comes out clean.
- Cool in pan, then cut into squares to serve. Would go well with vanilla ice-cream.
