Vegetable Crouton Pie
- 1 large bag mixed broccoli, cauliflower and carrots
- 1/2 tsp. salt
- dash of pepper
- 1 Tbsp. margarine
- 1/4 tsp. garlic powder
- 2 tsp. Italian seasoning
- 2 c. crushed seasoned croutons (Pepperidge Farm)
- 1/4 c. melted margarine
- 2 eggs
- 1/4 c. milk
- 1 1/2 c. grated Cheddar
- Microwave vegetables in casserole dish 9 minutes on High. Season with margarine, salt, pepper, garlic and Italian seasoning; set aside.
- Mix together croutons and margarine.
- Press into a 9-inch pan.
- Bake 8 minutes at 375u0b0.
- Construct pie.
- Sprinkle 3/4 cup of cheese on crust.
- Add vegetables.
- Sprinkle remaining cheese on top.
- Beat eggs and add milk; stir.
- Pour over the pie. Bake 35 to 40 minutes at 375u0b0.
- A real crowd pleaser!
