Light Chocolate-Grand Marnier Cheesecake
- 6 chocolate wafers, finely crushed
- 1 1/2 c. nonfat cream cheese
- 1 c. sugar
- 1 c. nonfat cottage cheese
- 1/4 c. plus 2 Tbsp. unsweetened cocoa
- 1/4 c. flour
- 1/4 c. Grand Mariner
- 1 tsp. salt
- 1 egg
- 2 Tbsp. semi-sweet chocolate chips
- Sprinkle chocolate wafer crumbs in bottom of an 8-inch spring-form pan and put aside.
- Using a food processor, mix the cream cheese and next 6 ingredients together until smooth.
- Add egg and process until blended.
- Fold in chocolate chips.
- Slowly pour mixture over crumbs in pan.
- Bake at 300u0b0 for 45 to 50 minutes or until cake is set.
- Let cool in pan on wire rack.
- Cover and chill at least 8 hours.
- Remove sides of pan and onto a serving platter.
