Pavlova(Heritage: Australia)
- 4 egg whites
- 1/2 tsp. salt
- 1 c. sugar
- cornstarch
- 2 tsp. cornstarch
- 2 tsp. vinegar
- 3 to 4 c. fruit (bananas, pineapple, strawberries, kiwi and/or passion fruit)
- heavy whipped cream
- Preheat oven to 300u0b0.
- Grease an 8-inch round cake pan.
- Cover bottom with circle of wax paper.
- Grease paper and dust lightly with cornstarch.
- Beat the egg whites in a large bowl until foamy. Add the salt.
- Beat until stiff.
- Gradually add the sugar, beating well after each addition.
- When whites are glossy, combine 2 teaspoons cornstarch with the vinegar and fold into whites.
- Spoon mixture into cake pan and smooth it towards edges.
- Hollow out center slightly.
- Place pan in oven and reduce temperature to 250u0b0. Bake for 1 1/4 hours.
- Remove.
- Let cool.
- Remove and place it on a serving dish.
- Drain all fruit and spoon on top.
- Cover with whipped cream and serve.
