Chicken Parmesan
- 1/3 c. saltine cracker crumbs
- 3 Tbsp. Parmesan cheese
- dash of black pepper
- 1 egg, well beaten
- 2 Tbsp. dry white wine, divided
- 2 boneless, skinless chicken breasts (4 oz. each)
- 2/3 c. tomato sauce
- 1/4 tsp. Italian seasoning
- 1/8 tsp. salt
- 1/8 tsp. garlic powder
- 1/4 c. shredded Mozzarella cheese
- Lightly grease pan or baking dish.
- Using meat mallet or edge of saucer, pound chicken until 1/4-inch thick.
- Combine cracker crumbs, Parmesan cheese and pepper.
- Combine egg and 1 tablespoon of wine.
- Dip chicken in egg mixture and then in cracker crumb mixture to coat.
- Arrange chicken in prepared dish.
- Bake at 400u0b0 for 20 to 30 minutes.
