Mamma Kelly'S Brunswick Stew
- 1 hog head
- 2 hens
- 4 lb. hamburger
- 2 garlic salt
- 3 seasoned salt
- 1 hot sauce
- 2 Worcestershire sauce
- 8 chili sauce
- 10 catsup
- 12 tomatoes
- 4 butter beans
- 4 English peas
- 3 snap beans
- 10 Niblets corn
- 10 vegetable soup
- 4 okra
- 1 peck Irish potatoes
- 1/2 peck onion
- salt
- black pepper
- Cook hog head and hens; grind meat.
- (Boston butt, souse meat or other pork may be used.)
- Cook hamburger, stirring to make it crumble apart.
- Drain.
- Peel, dice, salt and cook potatoes and onions.
- Drain all vegetables (except soup and tomatoes) including potatoes and onions.
- Combine all ingredients with salt and pepper to taste in big heavy pot.
- Bring to a boil on medium heat, stirring continuously, as it burns easily.
- Turn heat down; stir and simmer and simmer and stir until stew is thick and all flavors are mixed.
- Feeds multitudes.
- Cut recipe in half if you don't plan to feed a big crowd.
- Freezes well.
