Irish Bread
- 4 c. flour
- 6 tsp. baking powder
- 1 tsp. salt
- 1 c. sugar
- 3/4 c. raisins
- 2 1/3 c. warm milk
- 1/3 c. melted butter
- 2 eggs
- 1/4 c. caraway seed (optional)
- 2 3/4 c. unsifted all-purpose flour
- 1/4 c. sugar
- 1 1/2 tsp. baking soda
- 1 tsp. cream of tartar
- 1 tsp. salt
- 1/4 c. (1/2 stick) butter
- 1/2 c. dried currants (dark seedless raisins)
- 1 3/4 c. buttermilk
- 1 Tbsp. butter, melted (optional)
- Heat oven to 400u0b0.
- Lightly grease an 8-inch spring-form pan. In large bowl, combine 2 1/4 cups flour, sugar, baking soda, cream of tartar and salt.
- With pastry blender or 2 knives, cut in butter until coarse crumbs form.
- Fold in currants.
