Light Brownie Pudding
- 1 c. sifted all-purpose flour
- 3/4 c. sugar
- 2 Tbsp. cocoa
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. skim milk
- 2 Tbsp. salad oil (may be reduced to 1 1/2 Tbsp. for low-fat diets)
- 1 tsp. vanilla
- 3/4 c. chopped walnuts
- 3/4 c. brown sugar
- 1/4 c. cocoa
- 1 3/4 c. hot water
- Sift together first 5 ingredients.
- Add milk, salad oil and vanilla, mixing until smooth.
- Add chopped nuts and pour into a greased 8 x 8 x 2-inch pan.
- (A nonstick pan or one coated with nonstick cooking spray may be used.)
- Mix together brown sugar and 1/4 cup cocoa; sprinkle over batter.
- Pour hot water over entire batter.
- Bake at 350u0b0 approximately 45 minutes.
- Yield:
- 6 to 8 servings.
