Paella
- 1 c. olive oil
- 1 chicken (2 lb.), cut up
- 1 large onion, chopped
- 1 clove garlic, chopped
- 1 green pepper, chopped
- 2 c. converted rice (Uncle Ben's)
- 1 tsp. saffron
- 1 c. frozen peas
- 1 lb. shrimp, shelled (raw)
- 12 mussels
- 1 c. red pimento
- 4 c. water
- 1 tsp. parsley
- salt to taste
- Heat olive oil and brown chicken pieces on all sides. Sprinkle chicken with salt and remove from pan.
- Add onion, garlic and green pepper.
- Saute until vegetables are tender.
- Add rice and saute until rice is golden.
- Add saffron, chicken and hot water.
- Cook about fifteen minutes.
- Add the shrimp, peas, mussels and pimento.
- Cook another fifteen minutes.
- After that, let it set in pan fifteen minutes before serving.
- Serves 6 people.
