Chicken Spaghetti
- 1/4 c. chopped onion
- 1/4 c. chopped bell pepper
- 1/2 c. chopped celery
- 2 Tbsp. cooking oil (I use canola oil)
- 1 c. boiling water or chicken broth (I use chicken broth)
- 1 pkg. Weight Watchers chicken gravy mix
- 4 oz. can sliced mushrooms (optional)
- 1 can Ro-Tel tomatoes
- 4 oz. Velveeta light
- 8 oz. cooked chopped chicken
- 3 c. cooked thin spaghetti
- Saute first three ingredients in oil.
- Add gravy mix dissolved in chicken broth or water.
- Add mushrooms, Ro-Tel tomatoes, cheese and chicken.
- Stir until warm and cheese is melted.
- Layer mixture with spaghetti in Pyrex dish that is sprayed with Pam.
- Bake in a 400u0b0 oven for 25 minutes or until bubbly.
- Serves 4.
