Potato, Pepper And Kielbasa Casserole

  1. Core and seed peppers; cut in 1 1/2-inch pieces.
  2. Place in large bowl.
  3. Cut onions in thin wedges; add to bowl.
  4. Halve potatoes;
  5. add
  6. to
  7. bowl.
  8. Peel casing from kielbasa if necessary. Cut
  9. into 1/2-inch thick slices; add to bowl.
  10. Sprinkle with salt and
  11. pepper;
  12. toss
  13. with
  14. oil.
  15. Transfer mixture to shallow 1 1/2 quart casserole dish.
  16. Cover with lid or aluminum foil.
  17. Bake
  18. 35 minutes.
  19. Stir in cream, cover and bake 10 minutes more until bubbly and oil and cream have come together.
  20. Sprinkle with parsley if desired.
  21. Bake in 400u0b0 oven for 55 minutes.
