Bacon Mushroom Biscuits
- 1 lb fresh mushrooms, finely chopped
- 1/2 medium sweet onion, chopped
- 2 tablespoons margarine
- 1/8 teaspoon thyme
- 1/4 teaspoon salt
- 1/2 teaspoon ground mixed peppercorns
- 1 1/2 teaspoons flour
- 1/4 cup sour cream
- 1/4 cup cream cheese
- 1/4 cup cooked crumbled bacon
- 1 (12 ounce) package texas-style home-style biscuits
- Preheat oven to 350 degrees.
- In a large skillet, saute mushrooms and onion in margarine until tender, about 5 minutes. Season with thyme, salt and peppercorns.
- Sprinkle flour over mushroom mixture. Stir. Reduce heat to low. Stir in sour cream, cream cheese and bacon. Heat just until thickened. Remove from heat.
- Remove biscuits from tube. Press each biscuit to 1/4-inch thickness. Place 1-1/2 teaspoons of mushroom mixture on one half of each biscuit. Fold other half of biscuit over filling and press to seal.
- Bake for 13 to 15 minutes or until golden brown. Serve.
