Chicken Breast Supreme
- 4 whole chicken breasts, boned and skinned
- 1/4 tsp. poultry seasoning
- 1/2 tsp. seasoning salt
- 1 tsp. salt
- dash of black pepper
- flour (for flouring chicken)
- 4 Tbsp. butter
- 1 Tbsp. flour
- 1/2 to 1 c. water (hot)
- Wash and dry chicken breast.
- Combine poultry seasoning, seasoning salt, salt and pepper; rub mixture into chicken, being sure to cover all sides.
- Flour, using enough flour to coat lightly.
- Quickly brown in hot butter in heavy skillet.
- Turn to brown evenly.
- Transfer to 9 x 13-inch baking dish.
- Stir 1 tablespoon flour into drippings, brown slightly, then add water. Mix well and pour over the chicken.
- Cover tightly.
- Bake at 325u0b0 for 45 to 50 minutes or until tender.
- Remove cover last 10 minutes to crisp crust.
- Serves 8.
